Cassava 'Heavy Cake' is the unofficial national desert of the Cayman Islands. It is made with cassava root (also known as tapioca). The cassava is grated, soaked, and then baked into a very dense, sweet cake. Every family has its own recipe, but heavy cake is typically flavoured with spices like cinnamon and nutmeg.
